And yet more rain for the coming week, so I guess we’ll be indoors a lot more. I might do some batch cooking this week so I can restock the freezer.
Do you ever cook enough for more than one meal? How do you like to freeze them? Freezer bags, plastic containers, or glass?

Sounds yummy for the week! I usually make more than one meal but enough for one more meal that we will have within the next two weeks. Sometimes if I do freeze something, I usually use plastic containers 🙂
betty
Betty: I need to do a post on how I set up my batch cooking. I use plastic occasionally, but I won’t microwave anything in plastic.
LOL, I mean within the next two days; not two weeks. That would be terrible to leave something in the fridge like that for two weeks and then eat it 🙂

Betty: If you could keep something fresh in your fridge for two weeks, I’d want your secret!
Sounds good. I see you’re a fan of roast potatoes with salmon, too. One thing I would recommend if you tire of asparagus and have a surplus of peas –> process a great wad of peas with a touch of butter and salt and lashings of black pepper. Lemon juice and/or mint optional. Spoon on plate to form a mound and sprinkle fried smoked bacon pieces or pancetta on top. And place the salmon on top of it all. If you want to be playfully bold, you can sprinkle the crisp pancetta on top of the salmon instead. I’m feeling hungry. Just as well we have a roast lamb dinner : )
Mike: We love peas! Alas, no matter how much we plant, it’s never enough.
Now I have to buy peas. Ours haven’t fleshed out in the pod yet.
